What You'll Need:
- 3 cans BELA Codfish Portuguese Style (with caramelized onions, garlic, and EVOO)
- 1 cup of your favorite flour (e.g., Bob’s Red Mill Cassava flour for a gluten-free option)
- High-heat oil for frying (e.g., grapeseed, avocado, or safflower oil)
- 1 cup arugula, for serving
- Your favorite dipping sauce (e.g., aioli or hot sauce)
What To Do:
- Open the cans of BELA Codfish, including the caramelized onions, garlic and extra virgin olive oil.
- Using two forks, finely shred the codfish fillets and mix in the contents of the can, including the onions and oil.
- Pour some of the oil from the can into the pan for frying (or, if air frying, use it all to coat the shredded fish).
- Shape the bolinhos (codfish fritters) to your preferred size—either meatball-sized or latke-sized, depending on how many you're serving.
- Roll the bolinhos in your chosen flour to coat evenly.
- Heat a thin layer of high-heat oil (e.g., grapeseed, avocado, or safflower) in a skillet over medium-high heat (around level 7).
- Once the oil is hot, add the bolinhos to the pan and let them fry until golden brown, about 4 minutes per side.
- Remove the bolinhos from the pan and place them on a bed of arugula.
- Serve with your favorite dipping sauce on the side.
