Joshua's Famous Sardine Salad

Servings: 2-4

 

What You'll Need:

  • 1 can BELA Sardines (Plain, Lemon, or Piri Piri) 
  • ½ large carrot, peeled and diced into small pieces
  • 1 celery stalk, de-stringed and diced into small pieces
  • ¼ red or white onion, diced 
  • 1 hard-boiled egg, chopped
  • Fresh parsley or cilantro leaves (no stems), for garnish

 

What To Do:

  1. Add the sardines (including all of the organic EVOO) to a mixing bowl. The high-quality olive oil enhances flavor and reduces the need for additional binders like mayo or mustard.
  2. Add the diced carrot, celery, onion, or shallot, and chopped hard-boiled egg to the bowl.
  3. Gently mix the ingredients with a fork, ensuring the sardines remain in small pieces (about the size of the diced vegetables). Avoid shredding the sardines.
  4. Garnish with fresh parsley or cilantro leaves.
  5. Serve in a bowl with crackers, or as a topping for open-faced bread points.
